the recipe for No Bake Turkey Cookies. The last time I made these
cookies, my son and his cousins were young kids. A wave of nostalgia
swept over me so I went to the store and bought the ingredients.</div>

The easiest way to make the cookies is to set everything up in an
assembly line. Put the malted milk balls in one bowl, red cinnamon
candies in another and candy corn in yet another. Take the cookies apart
and separate the cream filled side from the plain side.<br />

Normally, when I work with frosting, I use a pastry bag.
Unfortunately, that doesn't work with this recipe. Since a pastry
bag is open on one end, it's difficult to keep the bag closed while assembling
the pieces periodically. You can use a knife or, what I prefer, a
decorating set.<br />

A decorating set is similar to a cookie press. It has a
tube that can be filled, in this case, with frosting. Instead of having interchangeable
discs like a cookie press, the tube has a coupler -- a device that lets you
easily and quickly change tips -- with a pastry tip attached. After the
tube is filled with frosting and the handle attached, the frosting can be piped
using as little or as much as you need. I find this much easier to use
than a knife, especially when I only need a dollop of frosting.</div>

If you're making a large number of cookies, it's a good idea to
make them in batches so the frosting doesn't dry before the cookies are
assembled. I work in batches of 10.</div>

It's light, refreshing and very easy to make.<br />

What I do like about Rinku's book is that in her introduction she goes into a little bit of a history and geography lesson about Bengal which is quite informative. In her first chapter she talks about all the different ingredients in Bengali cooking, the tools and the techniques. In Chapter Two she will go about and explain Eating the Bengali Way and different Bengali menus. Throughout her book she gives little tidbits about each recipe that she makes or just an informative piece of information. What I feel this book is lacking though are pictures for each dish. There is only a small section in the middle of the book with about 25 of her recipes. Also, if you are not living in an area that has access to all the different Bengali spices and seasonings, it will be difficult to make some of the recipes in this book as they are not readily available in American supermarkets. All in all, if you are looking to be adventurous, then this is the book for you.</div>

you do a search for your name on Google, and you have a LinkedIn account,

Our food is as diverse as our people. Located in the Southern part of the Borough of Brooklyn lies a neighborhood called Brighton Beach. Brighton is a summer destination because of it's close proximity to Coney Island. Another fact about the area is, it has a very large percentage of Russian immigrants. Dubbed as "Little Odessa" by it's local inhabitants, because many of it's residents come from Odessa which is in the Ukraine. </span><br />

Add 1 tbsp of the oil to a large non stick Dutch oven over low heat. Add the onions and stir. Let cook for about 5 minutes until they get translucent. Add the salt, pepper, paprika and sugar, stirring frequently. You want the onions to turn a deep brown color so this could take at least 20 minutes. Just keep it on a low flame and stir frequently until done. You might need to add the other tablespoon of oil in case the onions are sticking to the pot.</div>

I will begin my series of reviews with the Italian book in the series called Cicciotti's Kitchen by Gaetano Cicciotti. Gaetano Cicciotti owns <a href="http://www.cicciottis.com/" target="_blank">Cicciotti's Trattoria</a> in Cardiff by the Sea, CA. Gaetano believes in fresh and simple cooking using fresh ingredients. He grew up in Naples, Italy and spent many hours in the kitchen with his mother and grandmother. His recipes will transport you back to simpler times where old world traditions still exist. In his book he will share with you Italian classics, restaurant favorites and new creations that are very easy to make. The basics of his recipes use 7 very simple ingredients; fish, cheese, pasta, olive oil, tomatoes, onions and basil.<div>

To the pot add the artichokes, cooking for 2-3 more minutes. Add in the broth and the basil. Bring to a boil and then lower the heat to a simmer and cook for another minute or two. Season with salt and pepper, to taste.</div>

I had a lot leftover so I decided to make them into quesedillas. You can even serve these as little appetizers at your next party. They are a perfect finger food. Line a sheet pan with non stick foil and carefully add the quesedilla on top of it. Place under the broiler for about 2 minutes. You will need to watch it very carefully because it can burn quite quickly. When the top of the tortilla starts to turn a nice light brown color, carefully flip over. Be very careful when flipping. You will need to use both hands and 2 spatulas. </div>

Marinate onions and peppers in half of the marinade and put in the refrigerator for about 2 hours.</div>

Marinate the chicken cutlets in the other half of the marinade and put in the refrigerator for at least 2 hours.</div>

In a large very hot non stick skillet heat up the tortillas for 5 seconds on each side. Be careful not to burn. You just want them lightly browned. Set aside.</div>

In a large non stick Dutch oven heat the oil and add the peppers and onions with the marinade and cook over medium low heat until the peppers and onions have softened, approximately 10 minutes. Stirring frequently. When done set aside.</div>

Grill chicken over medium heat, until done, approximately 7 minutes on each side. Cover and let rest for about 5 minutes. When cool enough to handle, slice the chicken.</div>

Assemble the fajitas in the tortillas with the chicken strips, onion and pepper mixture, cheese and the accouterments. Garnish with cilantro, if desired.</div>

She was looking for a guest poster and I "applied for the job", so to speak. We threw around a couple of ideas and came up with a "joint post" which has been lots of fun to work on. We each did the same dish, but a slightly different recipe and as you can see from our pictures, the final result looks just delicious!! Erinn has a really beautiful food blog so go check it out.<br />

Chicken Picatta is a delicious dish made with lemon, capers, olive oil, wine and butter. I only used a small amount of butter to try and keep it lower fat. Most recipes that I have seen use at least 5 or 6 tablespoons, which I feel is a lot. I made this for my son's 25th birthday so it's definitely a "special occasion" dish as it takes a bit more time than a normal every day chicken dish. I love the sourness of the lemons and the saltiness of the capers. All the ingredients compliment each other so well.<br />

Melt margarine in same skillet <br />
Stir in the flour and heat over medium for 1-2 minutes <br />
Stir in chicken broth or wine and lemon juice and heat to boiling <br />
Stir until thickened (1-2 minutes) <br />
Reduce heat and simmer 15 minutes until sauce consistency <br />
Stir in parsley </div>

Add the chicken back in and spoon over the chicken until the chicken and sauce are both heated. <br />

Season the chicken with salt and pepper, dredge it in the flour, then dip it in the egg mixture and shake off the excess. Roll it in the bread crumbs, again shaking off the excess. Repeat with the remaining cutlets.</div>

Over medium low heat add the olive oil and half of the butter. When the oil and butter start to sizzle lay the cutlets gently in the pan, two at a time. Do not crowd the pan. You will probably need to do this in batches. Cook the chicken for about 3 minutes until golden brown and then carefully turn over and cook for another 3 minutes, until chicken is cooked through and golden. After all the chicken is cooked, set aside to keep warm.</div>

Add the lemon juice, wine and capers into the pan and bring to a boil to boil of the alcohol, scraping all the little browned bits. These brown bits will add a lot of flavor. Once boiling, lower the heat to a simmer and cook for another minute. Add the butter and swirl into the sauce until melted. Return the chicken back into the pan and coat the chicken with the sauce. Sprinkle the parsley on top and serve!</div>

1 cup Israeli couscous cooked according to package directions</div>

1 tsp. grated lemon peel</div>

juice of 1 large lemon</div>

1 tbsp. fresh dill weed, chopped</div>
<div style="text-align: left;">
1 tbsp. garlic powder</div>

In large glass measuring cup add lemon peel, lemon juice, dill weed, garlic powder, salt and pepper. Mix well. Add the salmon steaks to a ziploc bag and pour the marinade over. Place in the refrigerator for 20-30 minutes, turning the bag half way through.<br />

Preheat oven to 400 degrees.<br />

Lay salmon steaks on a baking pan and bake for 10-20 minutes until fish flakes with a fork. Serve with the couscous.<br />

Matbucha, pronounced (Mott-Boo-Chah), from the Arabic, <i style="background-color: white; line-height: 19.1875px;">maṭbūkhah</i><span style="background-color: white; line-height: 19.1875px;">, is a dish consisting of roasted green peppers (I used red too), tomatoes, garlic and chili pepper. The name in Arabic means "cooked salad". This is usually served as an appetizer or Meze (small dishes served as an appetizer in the Middle East and the Balkans) and at room temperature or even chilled. This would go wonderful as a spread on crackers too. To a large Dutch oven add the peppers, tomatoes, garlic, sugar, red pepper flakes and salt. Bring to a boil over medium heat. Once boiling, reduce heat to medium low and cook for about 45 minutes, stirring frequently. You don't want the mixture to stick to the bottom of the pot. Cook until the mixture is cooked down and the liquid is absorbed. While I was stirring, I also chopped the tomatoes and peppers even more.</div>

After the mixture has thickened and the liquid absorbed, add in your paprika and olive oil. Mix well. Cook for another 15 to 20 minutes. Once done, remove from heat and let cool to room temperature.</div>

To a large glass measuring cup add the curry paste, oil, honey, juice of 2 limes, soy sauce and fish sauce. Mix well and let sit for about a half hour so the flavors can meld together. To a large ziploc bag add the chicken and the marinade and let sit in the fridge for at least 2-3 hours, preferably longer. Turning after every hour or so.</div>

Remove chicken from bag and place on a plate. Pour marinade into a saucepan and boil for at least 3 minutes. Let cool for a bit so it's not boiling hot. Once cooled and easy to handle, poor into a small bowl. You will use this to baste the chicken with at the end.</div>

Preheat grill to medium high and place chicken on hot grill. Sear each side for 2 minutes until grill marks appear on both sides. Lower the heat to low and cook chicken for about 30-45 minutes, turning occasionally until no longer pink inside. The last 10 minutes of cooking baste both sides with the marinade.</div>

Add the remaining tablespoon of oil and when hot, add in the beef and stir fry until no longer pink. You may need to do this in batches as you do not want to crowd the pan. Mix the corn starch and water into a small cup and then add to the pot once boiling. Stir to combine. Lower the flame and cook until the sauce starts to thicken, about another minute or two. Stirring frequently. When done, serve over rice.</div>
