When I first put up this blog I had absolutely no idea what I was doing or if I would even like doing it. I can happily say that I truly love taking pictures of my food and writing about it. But what really thrills me the most are all the lovely comments from my readers. Readers who span the globe on 6 continents, reaching out and visiting me in my little corner of cyberspace here in New York City. I want to thank all of you who have been visiting me from the beginning and for those of you who are new to my blog. Old friends and new friends who I have met along the way. Low Fat Buffalo Cauliflower Bites

Most everyone loves Buffalo Chicken Wings or Bites right?  Well these are made with cauliflower so they are very low in fat and calories but they still have wonderful flavor and a definite bite!!


Low Fat Buffalo Cauliflower Bites
Serves 4

Ingredients

1 large head of cauliflower separated into florets
1 cup flour
1 cup water
1 tsp. paprika
1 tbsp. garlic powder
1 cup hot sauce
1 tbsp. melted butter
celery sticks
1 cup Low fat or fat free blue cheese dressing 
salt and pepper to taste

Directions

Preheat oven to 400

Put non stick aluminum foil on a sheet pan or coat it with cooking spray.  Combine the flour, water, paprika, garlic powder, salt and pepper in a large bowl.  Mix well.  Add the cauliflower to the mixture and coat well.  Drain off excess batter and lay on sheet pan.  Bake for 15-20 minutes and then turn over and cook for another 10-15 minutes.  Combine the hot sauce and butter in a bowl and mix well.

Pour the sauce mixture over the cauliflower and mix well.  Cook for another 5-10 minutes or until lightly browned.

Serve with blue cheese dressing and celery sticks.
