When I first put up this blog I had absolutely no idea what I was doing or if I would even like doing it. I can happily say that I truly love taking pictures of my food and writing about it. But what really thrills me the most are all the lovely comments from my readers. Readers who span the globe on 6 continents, reaching out and visiting me in my little corner of cyberspace here in New York City. I want to thank all of you who have been visiting me from the beginning and for those of you who are new to my blog. Old friends and new friends who I have met along the way. Thank you from the bottom of my heart for your wonderful comments on here and in private messages and emails. I truly appreciate them and it inspires me to cook more.

Baked Lemon Tilapia

Tilapia is a very versatile fish and goes great with citrus flavors, especially lemon.  I bake it but at the end I put it under the broiler for a few minutes to brown it up a bit.  If you like Tilapia, you will definitely like this recipe.  This is also quite quick and easy.


Baked Lemon Tilapia
Serves 4

Ingredients

4 tilapia fillets
6 garlic cloves, minced
Juice of 2 lemons, plus some slices for garnish
1/4 cup Extra Virgin Olive Oil
2 tbsp. fresh parsley, minced
salt and pepper, to taste

Directions

Preheat oven to 350 degrees.  
In a measuring cup mix together the lemon juice, olive oil, minced garlic, salt and pepper. Mix well and let it sit for about a half hour so the flavors blend together.  Lay the fish fillets in a "broiler safe" baking dish and pour over the marinade.  Bake for about 20 minutes, or until fish is just about done.  Turn up heat to Broil and place under the broiler for a few minutes until slightly brown.  Don't leave it in too long as you don't want it to burn and dry up.
