When I first put up this blog I had absolutely no idea what I was doing or if I would even like doing it. I can happily say that I truly love taking pictures of my food and writing about it. But what really thrills me the most are all the lovely comments from my readers. Readers who span the globe on 6 continents, reaching out and visiting me in my little corner of cyberspace here in New York City. I want to thank all of you who have been visiting me from the beginning and for those of you who are new to my blog. Old friends and new friends who I have met along the way. Zucchini Casserole

I absolutely love zucchini and I wanted to make it a different way then just grilling it.  I remembered I had a recipe from a friend for Zucchini Casserole that was absolutely wonderful.  You definitely could do this with yellow summer squash too, if that is all you have on hand.  This can be served as an appetizer, side dish, a snack or even for breakfast.  It may also be served hot, cold or room temperature.










Zucchini Casserole
Serves 10

Ingredients

6 cups diced zucchini, about 3 large ones
1 cup grated Parmesan cheese
8 eggs
2 large onions chopped
1/2 cup olive oil
2 cups Heart Smart Bisquick pancake and biscuit mix
1 tsp. Marjoram or oregano
1 tsp. salt
1/2 tsp. fresh ground pepper
Cooking spray
Paprika for sprinkling on top (not pictured)

Directions

Preheat oven to 350F degrees.  Spray a 13 x 9 baking pan with the cooking spray.  Mix all ingredients together and pour into the baking pan.  Sprinkle paprika all over the top.  Bake for 1 hour or until a toothpick inserted into the center comes out clean.
