When I first put up this blog I had absolutely no idea what I was doing or if I would even like doing it. I can happily say that I truly love taking pictures of my food and writing about it. Readers who span the globe on 6 continents, reaching out and visiting me in my little corner of cyberspace here in New York City. Chiang Mai Turkey Patties

Tonight we will be traveling to Chaing Mai Province located in the northern part of Thailand.  This recipe originally called for ground pork but I did not have any on hand and ground turkey is much less fattening.  Chaing Mai comes in sausage form in Thailand and is a very popular street food.  This recipe was adapted from Cooking Light


Chiang Mai Turkey Patties
Serves 4

Ingredients


1 1/4 pounds ground turkey or pork
1 tbsp. fish sauce
1/2 cup coarsely chopped shallots
14 cups finely chopped fresh cilantro
2 tablespoons minced peeled fresh lemongrass (if you can't find this use grated lemon peel)
2 tablespoons thinly sliced Kaffir lime leaves or 1 tablespoon minced lime rind
1 tablespoon minced peeled fresh galangal or 2 teaspoons minced peeled fresh ginger
4 garlic cloves, minced
1 tbsp. red or green thai curry paste
 lime wedges

Directions

Combine ground turkey and fish sauce in a medium bowl; toss to combine.
Add shallots plus the next 6 ingredients to the turkey or pork (if using) mixture and mix well.

 Using wet hands, shape mixture into 16 (1-inch-thick) patties (about 2 tablespoons per patty).  Heat a large grill pan over high heat. Add half of the pork patties. Cook for 5 minutes on each side or until done. Repeat the procedure with remaining patties.You can also use an outdoor grill which is what I used for this.
