When I first put up this blog I had absolutely no idea what I was doing or if I would even like doing it. I can happily say that I truly love taking pictures of my food and writing about it. But what really thrills me the most are all the lovely comments from my readers. Readers who span the globe on 6 continents, reaching out and visiting me in my little corner of cyberspace here in New York City. I want to thank all of you who have been visiting me from the beginning and for those of you who are new to my blog. Old friends and new friends who I have met along the way. Thank you from the bottom of my heart for your wonderful comments on here and in private messages and emails. I truly appreciate them and it inspires me to cook more.

Zucchini and Scallion Pancakes

Since I have been on Weight Watchers I have been eating lots of vegetables. It's a good thing that I love my veggies...LOL!!!  I was looking for a nice side dish to make with my grilled chicken. I checked out my "go to" Weight Watcher's recipe site, Skinnytaste, and I found something called Summer Squash and Chive Pancakes.  Well I didn't have the yellow Summer Squash or the fresh chives but I did have green Zucchini and Scallions so I decided to make it with those instead.  Thanks Gina for the idea!  They came out absolutely delicious!! I will definitely be making these again.



Zucchini and Scallion Pancakes
Serves 4

Ingredients


2 cups cooked shredded zucchini
1 egg
1 egg white
2/3 cup flour
1/2 tsp baking powder
2 garlic cloves, minced
1/3 cup parmesan cheese
3 tbsp fresh scallions (green onions/spring onions)
salt and pepper to taste
olive oil cooking spray


Directions:

In a medium pot add zucchini and cover with water. Bring to a boil and cover, cook until soft. When it's soft, drain in a strainer; add to a food processor and pulse a few times until chopped. Add the zucchini to a medium bowl. Combine zucchini with remaining ingredients  and mix well. 

Heat a large non stick skillet on medium heat.  When hot spray with cooking spray and reduce heat to medium low. Drop 1/4 cupfuls of batter, flatten them with the back of a spoon and cook a few minutes or until golden. Turn and cook the other side until golden. Set them aside and repeat with the remaining batter.
