Spanish Salad
I absolutely love salads and flavorful dressings. This salad has the flavors that you would find in Spain or a Spanish restaurant. Very simple and easy to prepare. It makes a perfect side dish or even as a main course for lunch with some crusty bread. I have been into Spanish food a lot lately and found a wonderful little Spanish restaurant here in the NY area that was fabulous. The prices were reasonable, the service and food were excellent. Spanish Salad
Serves 4
Ingredients
4 large tomatoes, chopped
1 cucumber, peeled and roughly chopped
3 large scallions (spring onions, green onions), chopped
3 large hearts of romaine, chopped (you can also mix in a bit of arugula/rocket lettuce)
10 or more large green pimento stuffed olives, sliced in half
2 tbsp. drained capers
1 garlic clove, chopped
2 tbsp. red wine vinegar
5 tbsp. extra virgin olive oil
1 tsp. paprika
1/2 tsp. ground cumin
salt and pepper to taste
Directions
In a large glass container or bottle mix together the garlic, salt, pepper, cumin, paprika, oil and vinegar. Let stand at least a half hour for the flavors to meld together. Toss the rest of the ingredients together. Add the dressing right before serving.
