When I first put up this blog I had absolutely no idea what I was doing or if I would even like doing it. I can happily say that I truly love taking pictures of my food and writing about it. But what really thrills me the most are all the lovely comments from my readers. Readers who span the globe on 6 continents, reaching out and visiting me in my little corner of cyberspace here in New York City. I want to thank all of you who have been visiting me from the beginning and for those of you who are new to my blog. Old friends and new friends who I have met along the way. Vegetable Fried Rice

This is a really easy fried rice recipe.  Today I made it without chicken or shrimp but you certainly can make it with that if you want.  Use about 1/2 pound of shrimp or chicken.  Just make sure to cut it up in small pieces first.








Vegetable Fried Rice
Serves 4

Ingredients
2 tbsp. canola oil
2 large eggs, beaten
6 scallions, sliced thinly
1 onion, diced
1 tbsp. minced ginger
1 cup frozen peas, thawed
2 tbsp. low salt soy sauce
2 cups cold white rice
2 tsp. rice vinegar
2 tsp. sesame oil

Directions 
Heat 1 tbsp. of the oil in a large non stick saucepan over medium high heat. Add the eggs and cook, stirring occasionally, until scrambled and cooked through, about 2 minutes.  Transfer to a plate.
Heat remaining 1 tbsp. oil in the same pan.  Add the scallions, onions and ginger; cook, stirring frequently and until onions are soft about 5 minutes.   Add the rice, peas, soy sauce, vinegar and sesame oil; cook, stirring occasionally, until heated through, about 4 minutes.
Add the egg and shrimp/chicken (if using); cook, stirring occasionally, until heated through, about 3 minutes.
