When I first put up this blog I had absolutely no idea what I was doing or if I would even like doing it. I can happily say that I truly love taking pictures of my food and writing about it. Chicken Satay

This is a really a very easy chicken satay recipe.  I got this from Rachael Ray of The Food Network.  The dipping sauce is made from apple juice, peanut butter, soy sauce and red curry paste.  This is a kid friendly dish cause kids love dipping their food into things as well as adults too....LOL!!!




Chicken Satay
Serves 4


Ingredients
1/2 cup apple juice, microwaved until warm
1/4  to 1/3 cup peanut butter
2 tbsps. soy sauce or tamari, your preference
2 tsp. red curry paste
8 to 10 chicken tenders (3/4 to 1 lb)

Directions 
Preheat grill to medium high heat
In a small mixing bowl, whisk together the apple juice, peanut butter, soy sauce and the red curry paste.

  1. it was very good....we had it for dinner tonight along with the bok choy and also made pad thai but that wasn't totally homemade.
